Fruit Muffins
 
  • 1 c. barley flour
  • 2 c. whole wheat pastry flour
  • 1 1/2 tbsp. Ener-G Baking Powder
  • 1 tsp. salt
  • 1 3/4 tbsp. flaxseeds, ground
  • 1/4 c. apple juice concentrate
  • 1/4 c. honey
  • 2 tbsp. water
  • 1/2 c. applesauce
  • 3/4 c. coconut milk
  • 1 1/3 c. raspberries, blueberries, or fruit of your choice, in small pieces
  1. Mix the dry ingredients together.
  2. Mix wet ingredients together separately
  3. Mix wet and dry ingredients together and stir briefly.
  4. If batter seems too dry or thick add some soymilk or apple juice mixing as little as possible.
  5. Spray muffin pans and fill with batter.
  6. Bake at 325 F for 35-45 min or until golden and toothpick comes out clean.

Yields: 9-12 muffins

NOTE: Canned fruit should be drained well.
